This Sausage Gravy Breakfast Skillet is a new favorite at our house. It is super easy to make with only 5 ingredients and tastes fantastic!! Hash browns, sausage, gravy, cheese, and eggs. YUM! We made this several times over the holidays and absolutely LOVE it! All of my favorite breakfast foods in one skillet. All you need is some fresh biscuits and you are set!
How to Make Sausage Gravy Breakfast Skillet
This casserole is super easy to make. Start with cooking some sausage. Remove the sausage from the skillet and add hash browns. Cook the hash browns until they start to turn golden brown. Add the sausage back to the skillet. Top with shredded cheese. Whisk together gravy mix, water, and eggs. Pour the gravy mixture over the sausage. Pop the skillet in the oven and bake.
- Don’t have a skillet? You can make this casserole in a baking dish instead.
- I used a roll of Jimmy Dean Sausage. You can use any flavor or any brand of breakfast sausage you prefer.
- Feel free to substitute turkey sausage for the regular pork sausage.
- For the gravy mix, I used a packet of Pioneer Sausage Gravy.
- You can assemble the casserole in advance and refrigerate or freeze for later.
- To bake the casserole after freezing, thaw completely and bake as directed.
- You can also freeze the baked casserole for later. To reheat, thaw and reheat in the microwave or covered with aluminum foil in the oven.
What to Serve with Sausage Hash Brown Casserole
While this is called a breakfast skillet, it is also delicious for lunch, or dinner. We usually serve this with some biscuits, grits, and/or fruit. This is also delicious with a batch of Cranberry Mimosa’s for brunch! Sounds perfect!

- 1 (2.75-oz) package sausage gravy mix, plus water called for on package
- 1 lb frozen diced potatoes, thawed
- 1 lb sausage,
- 2 large eggs
- 1½ cups shredded cheddar cheese
Preheat oven to 350˚F.
In a 10 or 12-inch cast iron skillet, cook sausage until no longer pink. Remove sausage from skillet.
Brown potatoes 5-6 minutes in sausage drippings. Remove skillet from heat. Add sausage to skillet. Top with shredded cheese.
Whisk together gravy mix, water, and eggs. Pour mixture evenly over potatoes.
Bake 30-40 minutes, or until filling is set in the center.
- For the gravy mix, I used a packet of Pioneer Sausage Gravy.
- Do NOT make the gravy. You are only going to use the contents of the packet.
- My gravy packet said to use 2 cups of water.
