Red beans and rice with boudin sausage

This is a traditional Monday food in New Orleans. Everyone has their own recipe for Red Beans & Rice, most of which probably change a little with each cooking. On a Monday the ladies of the house would put on a pot of red beans to cook all day while they tended to the laundry. This inexpensive dish also makes wonderful party food. Don’t forget the Tabasco or Bruce Louisiana’s Red Hot Sauce.

Step 1

In a 5 qt heavy pot add the water, ham hocks, onion, celery, bell pepper, peppers, garlic and onion powder, garlic, oregano, thyme, Tabasco, and bay leaves. Cover with cold water and bring to a boil. Cover pot and simmer for an hour until ham on hocks starts to fall off.

Step 2

Remove ham hocks from pot and pull ham from hocks when cool. Add ham and beans to pot. Bring to a boil, reduce heat and bring to a slow boil uncovered. Cook about 1 hour.

During cooking time you may need to add water to pot.

Step 3

Add the sausage. Cook ½ hour more; stirring the bottom of pot about every 15 minutes so not to let beans scorch.

If during cooking time beans stick to bottom of pan do not scrape pan. Change to another pot.

Step 4

Reduce heat to simmer. Cook about 30 minutes more or until beans are soft. When beans are cooked add (soft) butter and turn heat off and stir till butter melts. Add a little salt, let cool. Serve over rice.

Andouille Sausage Recipes

This is one of Mr. Maebell’s favorite dishes! Spicy Andouille sausage is cooked until slightly crisp, and paired with sautéed veggies, tender red beans and a fiery tomato sauce!

This andouille sausage and rice is an easy weeknight meal perfect for chilly days! This is a great dish to take to a pot luck or to make for a get together. It makes a ton and keeps well! 

My favorite thing about Andouille sausage, beans, and rice is that it is pretty easy to throw together and it mostly uses basic pantry staples you probably already have on hand. We love to pair this with these Cheddar and Summer Squash Cornmeal Muffins . It is a great flavor combination!

To make the homemade red beans and rice with andouille sausage, you’ll need the following ingredients:  

  • Andouille Sausage: you can also use smoked sausage if you prefer. 
  • Olive oil
  • Vegetables: Onion, Bell Pepper
  • Garlic
  • Canned kidney beans and red beans
  • Canned tomatoes with green chilis
  • Spices (Italian seasoning, chili powder, garlic salt, paprika, bay leaves)
  • Chicken broth
  • Jasmine rice

How to Make Red Beans and Rice with Sausage 

  1. Heat a large pot or dutch oven with a lid to medium heat. Lightly spray pot with cooking spray and place sliced sausage in skillet.
  2. Cook sausage for 2-3 minutes until browned.
  3. Add olive oil, chopped onion, peppers and garlic and let cook stirring occasionally for 5 minutes.
  4. Add drained and rinsed beans, undrained tomatoes with green chilis, spices, broth and bay leaves (if using)
  5. Bring mixture to a simmer, reduce heat to low, cover, and let simmer for at least 30 minutes.
  6. 15 minutes before serving, add in the rice, stir well and cover.

What to Serve with Red Beans and Rice

This really is a complete meal all on its own. However, if you want to serve this with something, it pairs wonderfully with cornbread. One of my favorite gluten free cornbread recipes are these Sweet Potato Cheddar Cornbread Muffins. They are the perfect blend of sweet and savory.

Tips for Andouille Sausage and Rice

  • If you have a gluten allergy, I recommend buying the Johnsonville brand andouille sausage. It’s certified gluten-free. 
  • Do not cook the rice before adding it to the pot. It gets cooked alongside the beans and sausage. 
  • You can likely make this meal in the Crockpot, if desired. Simply add all the ingredients to the Crockpot and cook on low all day. Add the rice in the last 30-ish minutes of cooking.

While it is perfectly fine to serve boudin as part of a meal with side dishes or other accompaniments, it is most often served on its own as an appetiser, often with crackers or bread and a bit of mustard on the side.

How do I cook my boudin sausage?

Place links of boudin into the seasoned boiling water such that they are totally submerged in the water. The water will then be cooled, but keep heating the water up to a very light simmer. Do not re-boil the water, as this can cause the boudin casings to burst. Continue to cook, uncovered, for about 10 to 15 minutes.
