I’m excited to add these Baked Bone In Chicken Breasts to my collection! Bone-in chicken breasts keep the meat moist and tender because who likes dry chicken? In addition to it’s juicy, delicious flavor, it’s super easy to make.

It takes just a few minutes of prep time, and then you just bake it. In just a few easy steps, you have a delicious, juicy chicken breast. It would go well with balsamic roasted veggies or my sweet and spicy brussels sprouts with cauliflower. 

This chicken breast recipe is very versatile. It makes a delicious, well-rounded meal served with roasted cauliflower  and perfect rice pilaf with vegetables. You can also use it for meal prep or to make chicken salad.

Bone-in Split Chicken Breasts

It’s important to get bone-in chicken breasts for this recipe. Although the cooking time is longer than boneless skinless chicken breasts, it’s worth it. Baking split chicken breasts results in the tenderness of dark meat, but the lighter flavor of white meat. The crispy skin brings it to the next level.

Avocado Oil

Avocado oil is a rich in healthy fats and can improve heart health. You may substitute olive oil if you’d prefer but it has a lower smoke point so I don’t recommend it. 

Black Pepper and Salt

Just a little bit of salt and pepper adds delicious flavor! I use kosher salt, but whatever kind you have on hand will work just fine.

Dried Thyme

Thyme has a sharp, earthy flavor that tastes delicious in this recipe. It’s full of vitamin C, potassium, and manganese which is great for immune support, healthy cells, and bone development.

Sweet Spanish Paprika

Sweet Spanish paprika has a sweet, warm, and mild taste. I like the flavor this adds to the chicken, but regular or smoked paprika would work as well.

Arrowroot Powder

The arrowroot powder helps produce a crispier skinned chicken. The amount you need will depend on the size of the chicken breasts. You can keep the seasoning the same, but adjust to more arrowroot powder for larger breasts. Corn starch may be substituted for arrowroot powder, but I prefer arrowroot. 

How to make Baked Bone-In Chicken Breasts

  1. Preheat your oven to 425 degrees F.
  2. Cover a rimmed baking sheet or baking sheet with aluminum foil and place a baking rack on top. Set aside.
  3. In a small bowl, combine the arrowroot powder, paprika, thyme, salt, and pepper. Set aside.
  4. Dry the chicken breasts with a paper towel and brush them with avocado oil.

  5. Sprinkle the arrowroot mixture on the chicken breasts and pat the mixture down on each breast.

  6. Place the chicken on top of the rack skin side up, and bake in the oven for 35-45 minutes, depending on the thickness of the chicken breasts.

    Check the chicken breasts using a meat thermometer or instant read thermometer and once they reach 160 degrees F, remove them from the oven and let the chicken rest for 5 minutes. They will continue to cook in the pan juices while they are resting without drying out. Enjoy!

What temperature should bone-in chicken breast be cooked to?

A safe internal temperature for chicken is 165 degrees F. For this recipe, you can remove the chicken from the oven once they reach 160 degrees F and allow them to sit for five minutes. This will allow the chicken to continue cooking while it’s resting without drying out.

What’s the best way to reheat this recipe without it drying out?

You can reheat this chicken in the microwave with a damp paper towel which will keep it from drying out. It can also be reheated in the oven. Just add water or chicken stock to the bottom of a baking tray or roasting pan until there’s a shallow layer of liquid. Tightly cover the pan tightly with aluminum foil, and bake at 350 degrees f for about 15 minutes or until the chicken is warm. 

How many servings is this recipe?

This recipe will make enough for 4 people, more if you’re serving it to small children. A whole chicken breast should be enough to serve one person. If you’re using this recipe for meal prep or in other recipes, it could serve more depending on how you’re using it.

Can I substitute olive oil for the avocado oil?

Yes. The two are very similar and be substituted for each other. My recommendation is avocado oil as it has a higher smoke point.

Can I use regular paprika instead of sweet spanish paprika?

Typically when a dish calls for paprika, it means sweet paprika. Sweet spanish paprika has a sweet, warm, and mild taste. If you’d like a more complex, smoky flavor, you can use smoked paprika.

Can I use this chicken recipe to make chicken salad?

Of course! I have a recipe for healthy avocado chicken salad with no mayo which would be a delicious way to enjoy this chicken recipe. Just follow the this recipe, cut it into chicken pieces once it cools off a little and is at room temperature, and make your chicken salad!

Crispy Skin Baked Chicken Breasts

Ingredients

• 2-4 tablespoons arrowroot powder*

• 1 tablespoon sweet Spanish paprika

• 2 teaspoons dried thyme

How do you cook bone

Split chicken breasts take 35 to 45 minutes to bake at 350 degrees F, compared to the 15 to 25 minutes at 425 degrees F needed to bake boneless breasts. The time is worth it. The supreme juiciness of bone-in, skin-on meat is hard to beat. The bone helps the chicken cook more evenly and the skin locks in moisture.

350 degrees F / 177 degrees C – 55-65 minutes..
375 degrees F / 191 degrees C – 45-60 minutes..
425 degrees F / 218 degrees C 35-45 minutes (preferred method).

Is it better to bake chicken at 350 or 400?

You can roast or bake anywhere between 325 and 450 degrees F. When roasting a whole chicken, a nice rule of them is to start at 400 to 425 degrees F and then turn the oven down to 350 after 15 minutes and cook until the internal temp of the chicken is 165 – 175 degrees F on an instant read thermometer.

How long do you cook bone

Bake in the middle of your oven's center rack for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) as read by a digital meat thermometer. For extra crispy skin, broil on high setting for an additional 2-3 minutes.
