    medium carrot, peeled and sliced

  4. 2 cups (480 ml)

    chicken stock

  5. 1/2 cup

    shredded or cubed cooked chicken breast meat

  6. 3/4 cup (85 g)

    dry pasta or noodles

What do you turn to when you seek comfort?

We all have days that leave us wanting a giant hug for whatever reason.  Maybe the day was cloudy and rainy.  Maybe we received bad news.  Or things didn’t work out as planned.  Maybe we can’t even put our finger on it, but we’ve all been there, that is for sure.

I love to curl up on the couch with a mug of tea or coffee and read or watch a movie.  That is my ultimate comfort day, and I try to do it now and then because sometimes it’s nice to take a break.  Not check email or social media, not get ready and go shopping, not cook or bake or clean.  Just do nothing.

Of course, food offers us comfort too.  I think warm foods are the most comforting: soup, stew, even a perfectly cooked piece of fish.  Okay, so maybe it’s just me who turns to wild salmon when they need a pick me up.  Perhaps we turn to the foods of our childhood or ones that remind us of great days, but for each of us there are particular foods that bring us joy.

And then there are desserts.  They don’t necessarily have to be warm (hello ice cream!), but it doesn’t get better than cookies or cinnamon rolls right out of the oven.

Now I’m hungry and craving comfort food and I hope you are too.  Easy Homemade Chicken Noodle Soup is just that: a one-pan breeze to make that has everything we love about canned varieties without preservatives or an overdose of salt.

Plus, this soup is super easy to make your own.  Any vegetables you have on hand will be great.  You can leave out the chicken or even add in some leftover pork or beef.  Add some fresh herbs or a different shape of pasta.  Make this soup your ultimate comfort food.

Print

  • 4 large carrots, peeled and sliced into ¼ inch thick rounds
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt
  • 32 ounces low sodium chicken stock
  • 16 ounces water
  • 6 ounces pasta, I used farfalle
  • 2 cups shredded cooked chicken
  • ½ bunch kale, torn into pieces


  1. Heat a medium stockpot over medium heat. Add the olive oil, followed by the carrots and onions. Sauté for about five minutes, stirring frequently until beginning to brown. Add the pepper and salt. Stir to combine. Add the stock and water, and bring the pot to a boil.
  2. One the mixture is boiling, add the pasta. Cook for about 8 minutes. Add the chicken and kale and cook for 5-7 more minutes, until the pasta is cooked.
  3. Serve immediately. Soup may also be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave in 30 second increments, stirring in between, until piping hot.
