Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon white pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 roasting chicken (6 to 7 pounds)
  • 1 large onion, cut into wedges

Directions

  1. Preheat oven to 350°. In a small bowl, mix the first eight ingredients.
  2. Pat chicken dry and place on a rack in a roasting pan, breast side up. Rub seasoning mixture over the outside and inside of chicken. Place onion inside cavity. Tuck wings under chicken; tie drumsticks together.
  3. Roast 2 to 2-1/2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.) Remove chicken from oven; tent with foil. Let stand 15 minutes before carving.

This tender garlic, butter & herb roast chicken is a family favorite! The chicken comes out crispy on the outside and tender and juicy on the inside every time. It has the perfect blend of fresh herbs and butter then roasted to golden brown.

  • 4 lb whole chicken
  • 1/4 cup unsalted butter (melted)
  • 3 tbsp olive oil
  • 1/4 cup white wine
  • 1 lemon (halved)
  • salt (to taste)
  • pepper (to taste)
  • 2 tbsp freshly chopped parsley
  • 9 garlic cloves (4 minced, 5 whole)
  • 3 fresh rosemary sprigs
  • 1 fresh thyme sprig

  • Preheat oven to 425F and line a baking tray with foil or grease a roasting pan and set aside.

  • Remove the neck and giblets from inside the cavity of the bird and trim any excess fat. Pat the bird dry with paper towels to get rid of any excess moisture. Pour the olive oil, melted butter, white wine, and the juice from half of lemon all over the chicken, under the skin and inside the cavity. Season the chicken well on the outside and inside the cavity with salt and pepper and then sprinkle on the parsley.
