Ground beef and cream of mushroom soup over mashed potatoes

Shepherd's Pie is basically a beefy pot pie with mashed potatoes on top instead of a crust, and mashed potatoes make everything better, don't they?  And now that there are so many quick options for mashed potatoes, you can have this one-dish meal ready in 30 minutes (it bakes right in the skillet)!  Just brown some ground beef and onion and add a few other pantry staples, including condensed cream of mushroom soup, which becomes a creamy sauce to hold the hearty filling together.  Shepherd's Pie is also very easy to customize.  Want to try ground turkey or lamb instead of ground beef?  Of course!  As long as you have the soup for the filling and the mashed potatoes on top, you can't lose!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup or Condensed Unsalted Cream of Mushroom Soup
  • 1 tablespoon ketchup
  • 1 package (about 10 ounces) frozen peas and carrots or your favorite frozen vegetable combination (about 1 1/2 cups)
  • 2 cups prepared instant mashed potatoes

Instructions

  • Tips

    • If preparing using Unsalted Cream of Mushroom you can add salt to taste.  Our test kitchen found that 1/4 teaspoon of salt enhanced the flavor of the recipe and contributes an additional 147.5 mg of sodium per serving, but you can add less or more to make it right for you.

    • Any mashed potatoes will work!  You can substitute store-bought refrigerated mashed potatoes or homemade mashed potatoes for the instant, if you like (you can even try garlic mashed potatoes!).
    • If you want the potatoes on top to be very browned, broil for a minute or two after baking.

  • Step 1

    Heat the oven to 400°F.  While the oven is heating, season the beef with salt and pepper.  Cook the beef and onion in a 10-inch oven-proof skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

  • Step 2

    Stir in the soup, ketchup and peas and carrots.  Spread the mashed potatoes over the beef mixture.

  • Step 3

    Bake for 15 minutes or until hot and the potatoes are lightly browned.

    This is a great recipe and an easy fix for a fast meal! But this is not a Shepherd's Pie! This is a Cottage Pie. A Shepherd's Pie is an Irish specialty and made only with Lamb! Cottage Pies are English and made with ground beef! Gordon Ramsay would scream if he saw you calling this recipe a Shepherd's Pie!

    Shepherd's pie is exactly what it's title is.....a Shepherd tends to sheep & it's little ones(lambs)...the pie is made with (lamb)....not beef(cow)or veal(calf).

    I make my shepard's pie using two cans of Campbell's Vegetable Beef Soup. My family loves it! Maybe I'll try it with cream of mushroom next time.
