Delicious and economical, the Cross Rib Roast is one of my favorite cuts of meat. It’s easy to prepare using a low and slow cooking method. Personally I prefer a slow cooker to do the job. That way I can set it up and forget it until dinner time. I also like to brown the Cross Rib Roast, onions, and garlic before the long slow cooking process to enhance the flavors. Here are a few other cuts of meat that will burst with flavor when cooked slowly at low heat.

What is a Cross Rib Roast?

The Cross Rib Roast is from the shoulder area. It is often confused with a Chuck roast but there is a slight difference. They are separate but adjacent cuts from the shoulder. Here’s a Cross Rib Roast slow cooker recipe that becomes elevated just by adding a couple of special ingredients. I prefer to roast the vegetables separately and then put it all together at the end. The chestnuts are added to the slow cooker about 30 minutes before serving. They can be purchased already roasted and peeled in a jar. They add an interesting flavor and texture to the dish but it’s still the same comfort food we crave when winter approaches.

Although Cross Rib roasts can be one of the tougher cuts of beef, when cooked properly it becomes tender and delicious. Think low and slow with a Cross Rib Roast. I prefer the slow cooker Crock Pot but a dutch oven works well also.

When should you make a Cross Rib Roast?

Directions:

  1. Salt and pepper the meat. Heat oil in fry pan and brown all sides of the roast. Remove the roast and put in the slow cooker.

  2. Add the onions to the fry pan and cook for about 10 minutes on medium heat. Add the garlic and cook 3 more minutes. Scape the mixture into the slow cooker.. Add the red wine, broth, bay leaves and thyme sprigs. Cook on low for 7 hours. About 30 minutes before serving add the chestnuts to the slow cooker and then thicken the sauce with 2 T corn starch and 2 T cold water mixed together. Roast the vegetables in the oven to add when serving.

Roasted Vegetables:

  • 4 carrots, peeled and cut into 2 inch chunks

  • 4 Large Yukon Gold Potatoes cut into 2 inch chunks

  • 2 T olive oil

  • salt and pepper

Mix all together and roast in 400 degree oven for about 25 minutes or until tender.
